Air fryer potato wedges are one of my absolute favorite potato recipes.
They are Crispy on the outside and soft on the inside.
The air fryer produces crispy, golden-brown potato pieces you’ll love. With little mess and clean up, it’s the perfect no-fuss weeknight side.
TABLE OF CONTENTS
You’ll need a few simple ingredients to prepare these crispy potato wedges.
Russet potatoes are ideal due to their high starch content, although Yukon gold or red potatoes also work.
Additionally, using extra-virgin olive oil or avocado oil helps achieve that desirable crispiness in the air fryer.
Lastly, I recommend seasoning the wedges with salt, black pepper, and herbs like fresh parsley or oregano, though you can experiment with your preferred seasonings.

How to Make Air Fryer Potato Wedges
Step 1
Wash the potatoes well under running water. I love them skin-on, but peel if you prefer.
Step 2
Cut the potatoes with a sharp knife on a cutting board first in half, then in half again to create perfect wedges.
Step 3
Soaking time is the key to my crunchy/soft secret.
Here’s how it works: excess starch causes the potatoes to soak, so I soak the wedges in cold water for a minimum of one hour. This allows them to remove the excess starch.
After the soaking time, wash the wedges under running water, then dry them well with a clean kitchen towel.
Step 4
Toss the wedges with olive oil, salt, pepper, and parsley in a large bowl.
Step 5
Preheat the air fryer to 380°F for a few minutes.
If necessary, work into batches. Arrange the seasoned potato wedges in a single layer in the air fryer basket.
Shake every 5 minutes and cook for 15-20 minutes.
Step 6 (optional)
Make a delicious sweet chili mayonnaise.
In a bowl, put 4 teaspoons of mayonnaise and 1 teaspoon of sweet chili sauce, and mix well.
For a spicier kick, use chili paste instead of sweet chili sauce.
Serve while still hot, accompanied by your favorite dipping sauce.
Recipe Tips For The Best Crispy Air Fryer Potato Wedges
- Use the right potatoes. Choose a starchy type of potato. Avoid waxy potatoes, as they do not hold up well when cooked.
- Keep potatoes in water for a minimum of 30 minutes; it helps to have potatoes that are crispy on the outside and soft on the inside.
- Dry the potatoes perfectly to prevent moisture from forming during cooking.
- Cut the potatoes all the same thickness and size for even cooking.
- Do not overcrowd and shake the basket, if we put too many potatoes, the hot air does not circulate well, and therefore you will not have the desired crispy texture result.
Recipe Variations
Here are some recipe variation ideas:
Parmesan wedge potatoes: A delicious variation of these potato wedges.
To prepare them after cooking for 15 minutes, transfer the potatoes to a bowl, add grated Parmesan cheese and Italian seasoning, and mix well.
Let them cook for another 5 minutes until they are well golden brown.
Paprika wedge potatoes: Add paprika powder and garlic powder and mix before cooking.
The paprika will give a beautiful color to your potato wedges.
Curry spice: An Indian-inspired version uses curry powder, cumin, coriander, and garlic powder.
Spice it up: For fans of heat, a dash of cayenne or red pepper flakes adds a kick.
You can also try chili powder or Cajun seasoning.
Use sweet potatoes: If you prefer sweet potatoes to regular potatoes, you can use them to make sweet potato wedges.
You will probably need 5 to 10 minutes longer in cooking.
What To Serve With Air Fryer Wedges
These potato wedges make a great pairing for so many meals.
I often serve them alongside robust mains like these tasty vegetarian empanadas, or alongside bacon cheeseburger sliders or turkey smash burgers.
Their crispy texture also makes them an ideal delicious appetizer.
Set out a basket with a collection of dipping sauces for a satisfying starter.
I love them with creamy sour cream, homemade BBQ sauce, or my go-to sweet chili mayo.
Storing & Reheating
I highly recommend enjoying the potato wedges immediately after cooking for the best texture and flavor.
However, I’ve found storing leftover potato wedges in the fridge works well for 3-4 days.
To prevent sogginess, be sure to transfer wedges to an airtight container once cooled.
If reheating, the air fryer comes in handy again. Simply add wedges and cook at 400°F for 3-5 minutes until piping hot and crisped.
For longer storage, freezing is my go-to.
After the wedges have fully cooled, transfer to a freezer bag or container, squeezing out excess air. Properly frozen, they’ll keep crispy for up to 6 months.
When ready to enjoy, cook for for 8-10 minutes from frozen.
Frequently Asked Questions
How long should you soak potatoes before air frying?
Soaking potatoes is an extra step that helps to make the crispiest air fryer potato wedges.
I recommend a minimum soak time of 30 minutes.
Why are my fries not crispy in the air fryer?
If your wedges turn out soggy, it’s likely due to excess moisture.
After soaking, it’s critical to dry the potato wedges thoroughly.
Overcrowding the basket is another common error. Be sure to leave enough space between wedges so hot air can freely circulate during cooking.
It also pays to shake the basket periodically. By redistributing the pieces mid-cook, you ensure all surfaces are exposed to the crisping heat.
Do the potatoes need to be boiled first for this air-fried wedges?
No. You do not need to boil the potatoes first.
How do I know when the potatoes are ready?
Potatoes are cooked when they are tender.
To test this, insert a toothpick into a potato wedge, and if it easily slides in and out, the potatoes are cooked.

As the kids are getting older, we now have a policy where once they get to 11 where they cook a meal for the family each week, (with help from me depending on their age). Our older kids can do it by themselves but our youngest daughter still needs some help, but she is great using the air fryer as it is a little safer than a tray in the oven. This week she wanted to make pork ribs with slaw and wedges and she found this air fryer wedge recipe. They turned out so well, soft in the center but crunchy on the outside. Her brothers were all very impressed and there wasn't a single one left! This is definitely a recipe that will be on rotation in our house!

That's amazing to hear! It's great to see your kids taking an interest in cooking and becoming more independent in the kitchen. The air fryer is indeed a great tool for young chefs, as it's safer and easier to use than a traditional oven.

Hello! Happy to have found your recipes! I am wondering about my different air fryer and how to make adjustments for your recipes. I don't have an air fryer with a basket. Mine has adjustable shelves. Is there anything specific I need to do to make the dishes you describe here? My mouth is watering and it's 2:30 am. That fresh bag of potatoes is calling my name! LoL Thanks for sharing! 🌻💕😊🌈🕊️✌️
