How To Clean Mushrooms

Mushroom cleaning should not be based on over-washing them; you can rub a damp cotton cloth over the surface of the mushroom to clean it of soil that would otherwise stick to it.

Mushrooms are composed mostly of water so they should never be washed under running water.

Recipe Variations

Corn flakes breading: Great not only for breakfast, these cereals, perhaps plain and not sweet, can be crushed into coarse pieces and used to coat foods for a crispy, golden, flavorful breading!

Eggless breading: You can get nice crispy crust in 2 ways: moisten the mushroom in olive oil and dip it in breadcrumbs, perhaps scented with fresh herbs; alternatively make a batter, mixing water flour, salt and pepper.

Use panko: The Japanese version of our breadcrumbs.

It can be found ready-made in Chinese, Korean, and Japanese grocery stores, or you can make it at home: just toast and then process white bread in a mixer.

Gluten-free breading: Use chickpea flour, for example, which is fantastic for vegan recipes but delicious and very useful for stir-fries either in powder or batter for really tasty breading.

You can also use cornmeal or rice flour, equally tasty and flavorful, ideal for eggless but great breadings.

You can serve these breaded mushrooms for a quick lunch, but also as an appetizer appetizer.
