I have a deep love for Asian noodles that has only grown over the years.

There’s just something about their versatility, flavors, and quick and easy preparation that makes them an absolute favorite in my book.

Living in Thailand and Vietnam has exposed me to countless noodle dishes.

Type of Asian noodles

Before all the Asian noodle recipes, let’s take a closer look at some of the most popular varieties:

Japanese Noodles:

Ramen: Arguably the most famous Japanese noodle, ramen is characterized by its springy, chewy texture and rich, umami-forward broth. Ramen noodles can be straight or wavy in shape.

Udon: These thick, pillowy wheat noodles have a satisfying bite and are often served in hot broth-based dishes or chilled with dipping sauces.

Soba: Made from buckwheat flour, soba noodles have a delicate, earthy flavor and tender yet firm texture. They’re delicious and served hot or cold.

Asian Rice Noodles

Rice Stick Noodles: Also known as “banh pho,” these flat, wide rice noodles are a staple in Vietnamese cuisine, often used in pho and other noodle soups.

Rice Vermicelli: Thin, delicate rice noodles that are a common component in spring rolls, salads, and stir-fries across Southeast Asia.

Glass Noodles: Translucent noodles made from mung bean or sweet potato starch that become chewy when cooked.

Chinese Noodles

Egg Noodles: These yellow, wheat-based noodles offer a satisfying chew and are widely used in Chinese stir-fries and soups.

Mung Bean Threads: Also known as “cellophane” or “glass” noodles, these clear, delicate noodles are popular in Chinese and Korean cuisines.

Wheat Noodles: Chinese wheat-based noodles come in various shapes and sizes, from tender lo mein to springy chow mein.
