Recipe FAQ’s
Are Chinese dumplings the same as potstickers?
A potsticker is a different type of dumpling.
The main characteristics that distinguish a potsticker from other dumplings are:
Cooking style: Typically, potstickers are first pan-fried, to make the bottom crispy, and then steamed.
On the other hand, I have seen other dumplings boiled, par-boiled, poached, simmered, braised, fried, baked, grilled, broiled, smoked, and even barbecued.
Meat filling: Most potstickers tend to use a meat filling mixed with vegetables.
Dumplings use a much wider range of ingredients, including seafood, cheese, root vegetables, legumes, etc.
Wheat wrappers: Almost all potstickers use a dough wrapper made of wheat.
Most dumplings also use a wheat wrapper, but many also use wrappers made of rice flour or other types of flour.
Shape: Most potstickers are shaped like a half moon.
Dumplings come in many shapes: round, cone-shaped, flat, circular, long, triangular and many more.
Why Did They Burn?
All air fryers cook slightly differently.
Check them after about six minutes to see if the dumplings have reached the desired crispness.
Also, did you add a little spray oil?
The oil spray definitely helps make them crispier without burning.
