The air fryer brings out their natural sweetness, leaving the centers soft and jammy with a bit of char around the edges. Best of all, it takes less than 15 minutes.

You just need a few simple ingredients, one bowl, and your air fryer. There’s no oven to preheat, no tricky steps, and no long waiting.

Why I Prefer the Air Fryer Over the Oven for Roasted Tomatoes

When I roast tomatoes, I always choose the air fryer. It heats up quickly, cooks evenly, and gives a perfectly caramelized edge.

I also like how easy it is; in under 15 minutes, you get delicious roasted tomatoes with hardly any effort.

Here’s what you’ll need:

Fresh tomatoes – Cherry tomatoes are my go-to, but grape tomatoes work too.

Extra virgin olive oil – Use the good stuff. It adds richness and helps the tomatoes roast.

Sea salt – Just enough to bring out their natural sweetness.

Black pepper – Freshly cracked if possible.

Balsamic vinegar – For that tangy-sweet depth.

Origano

Fresh herbs – Optional, but highly recommended. Basil is my favorite here.

Best Tomatoes for Air Fryer Roasting

I’m a little picky when it comes to tomatoes. 

These are my favorites:

  • Sweet cherry tomatoes (small and round)
  • Grape tomatoes or Roma tomatoes (a close second)
  • Heirloom tomatoes, if you want a richer flavor and gorgeous color

Avoid very watery tomatoes—they’ll release too much liquid and turn your roasted tomatoes into more of a sauce.

How to air fryer

Rinse the cherry tomatoes, then cut them in half.

In a bowl, toss the tomatoes with extra virgin olive oil, balsamic vinegar, a generous sprinkle of kosher salt, and freshly cracked black pepper.

Optional: If your tomatoes taste flat, add a tiny pinch of sugar. Totally optional—and usually not needed.

Place the tomatoes cut-side up in the air fryer basket, making sure not to overcrowd them. A little space helps them caramelize.

  • Slice larger tomatoes into quarters or sixths to ensure even cooking.

Cut-side up: This keeps the juices inside and concentrates the flavor.

Use great olive oil: A fruity, peppery EVOO, you’ll taste the difference.

Don’t overcrowd the basket: Giving the tomatoes space helps them roast evenly. Work in batches if needed.

I like tossing them with pasta and parmesan, or mixing them into a pasta salad for a quick, flavorful lunch, like in 15‑minute tortellini with tomato sauce.

They’re also great on avocado toast, in grain bowls or salads, or served with chicken cutlet or crispy fish batter.

Sometimes I spread them on crusty ciabatta with ricotta or goat cheese, or blend them into a simple sauce or tomato soup.

For something different, try to make roasted tomato hummus or other dips.

How to Store

Let the tomatoes cool completely. Store in an airtight container in the refrigerator for up to 5 days.

Reheat in the microwave or air fryer, or enjoy them cold—they’re delicious either way.

Freezer-friendly tip:
Spread the cooled tomatoes on a baking sheet and freeze until solid. Transfer to a freezer bag and use later in soups, sauces, or stews.

Yes! Add 2–3 extra minutes and expect a juicier, burst-in-your-mouth bite.
