The air fryer brings out their natural sweetness, leaving the centers soft and jammy with a bit of char around the edges. Best of all, it takes less than 15 minutes.

You just need a few simple ingredients, one bowl, and your air fryer. There’s no oven to preheat, no tricky steps, and no long waiting.
Why I Prefer the Air Fryer Over the Oven for Roasted Tomatoes

Best Tomatoes for Air Fryer Roasting
I’m a little picky when it comes to tomatoes.
These are my favorites:
- Sweet cherry tomatoes (small and round)
- Grape tomatoes or Roma tomatoes (a close second)
- Heirloom tomatoes, if you want a richer flavor and gorgeous color
Avoid very watery tomatoes—they’ll release too much liquid and turn your roasted tomatoes into more of a sauce.
How to air fryer
Rinse the cherry tomatoes, then cut them in half.
In a bowl, toss the tomatoes with extra virgin olive oil, balsamic vinegar, a generous sprinkle of kosher salt, and freshly cracked black pepper.

Optional: If your tomatoes taste flat, add a tiny pinch of sugar. Totally optional—and usually not needed.
Place the tomatoes cut-side up in the air fryer basket, making sure not to overcrowd them. A little space helps them caramelize.

Air fry at 380°F (193°C) for 8–12 minutes, depending on size and how caramelized you like them. I start checking around the 8-minute mark.

Transfer to a bowl, toss with fresh torn basil, taste, and adjust seasoning if needed. Serve warm.

- Slice larger tomatoes into quarters or sixths to ensure even cooking.
- Follow the same seasoning and cooking instructions.

How to Store
Let the tomatoes cool completely. Store in an airtight container in the refrigerator for up to 5 days.

Freezer-friendly tip:
Spread the cooled tomatoes on a baking sheet and freeze until solid. Transfer to a freezer bag and use later in soups, sauces, or stews.
