Baked cordon bleus! So delicious and easy to make, the whole family will love this delicious dish!

Ingredients

  • 8 Boneless chicken legs or slices of chicken breast 
  • 200g of Ham
  • 200g of Mozzarella cheese
  • 4 Onions
  • Salt & pepper 
  • Rosemary

Breadcrumbs mixture

  • Wheat flour
  • 3 Eggs
  • Breadcrumbs
  • Parmesan cheese 
  • Parsley 
  • Salt & pepper

Instructions

#1 Using a meat beater, lightly beat the chicken legs to make them thinner and more even, then salt and pepper them on both sides.


Tip: If you use chicken breast, marinate it with a little olive oil, this will make the chicken softer.

#2 Lay the chicken on a flat base and place a piece of ham and a slice of mozzarella on it and roll the chicken onto itself to make a roll.


Do not exaggerate with the filling because otherwise the rolls may break or the cheese may leak out.


#3 Pour enough flour into one bowl. Prepare the breadcrumbs mixture with breadcrumbs, parmesan cheese, parsley and salt and pepper in a second bowl. And beat the eggs in a third separate bowl.


#4 First dip the chicken in the flour, then in the eggs and at the end in the seasoned breadcrumbs, press a little so that the breadcrumbs will stick perfectly with the chicken.


#5 Prepare a baking tray with a bed of onions and lay down your breaded chicken rolls.


#6 Season with extra virgin olive oil and rosemary and bake your breaded rolls at 180°C for about 20-25 minutes.


In my recipe, I used cooked ham and mozzarella for the filling, but you can use speck or bacon, and also vegetables like spinach and soft cheese. As you prefer!

You can also prepare these delicious rolls even in the pan for a crispier breadcrumbs, but I prefer to bake them in the oven. This way they taste better and are less oily.

Just add a salad or some vegetables and your dinner is ready!

OMG! I soooo have to try this recipe! I love cordon bleu but I have never tried to make it but your recipe looks easy enough so will definitely give it a go! I like that I can also choose which cut of chicken as I have some fussy eaters in this house!
