Once the timer is over, depressurize and unlock your Instant Pot, then remove the lid. Mix in the bok choy and soy sauce.
Let the sauce sit and steam, stirring occasionally, for 3-5 minutes.
Season with additional salt, then serve with green onions as a garnish.
