- 1 Medium Butternut squash
- 1/2 tablespoon Salt
- 1 tablespoon Extra virgin olive oil or avocado oil
- A pinch of black pepper
- 1/2 teaspoon Cinnamon
Preheat the air fryer to 375°F (190°C).
Trim off the bottom end of the butternut squash and use a sharp vegetable peeler to remove the skin.
Halve the squash lengthwise, scoop out the seeds, and then cut the squash into 1-inch cubes.
In a large bowl, toss cubed squash with oil, salt, black pepper, and cinnamon until evenly coated.
Place squash cubes in a single layer in the air fryer basket.
Cook for 15-20 minutes, shaking the basket halfway through cooking time.
Once squash cubes are fork-tender and golden brown, remove them from the air fryer.
Sprinkle with additional coarse salt if desired.
Serve warm as a flavorful and healthy side dish.
If you want to prepare a whole butternut in halves, I recommend not peeling. The time will be extended by about 15 to 20 minutes of cooking time.
