Rice Porridge with Tasty Pork Meatballs

Ingredients
  

For the Rice Porridge:

  • 200 g Jasmine Rice
  • 1.5 l Vegetable Broth
  • 2 Garlics chopped
  • A small piece of chopped ginger
  • 2 Spring Onions
  • 3 Tablespoons of Soy Sauce
  • Salt & Pepper

For the Meatballs:

  • 400 g of Minced pork
  • 1 Chopped Garlic
  • A small piece of chopped ginger
  • 2 Tablespoons of Soy Sauce
  • Salt & Pepper

Instructions
 

  • For the pork meatballs, add all ingredients to a large bowl and mix together.
  • Form into balls (just 1/2 inch in diameter, approximately) and store in the refrigerator.
  • Place the rice in a pot; add enough water to cover the rice. Shake the water in the pot to rinse the rice and drain.
  • Repeat the rinsing process until the rice water is clean, about 6 to 8 times. Add 3 cups of water to the drained rice in the pot with a lid and cook the rice for 12 min.
  • Meanwhile in another pot, put the broth to heat.
  • When the broth is hot (it should not boil), add the pork meatballs, garlic, ginger and soy sauce. Let the meatballs cook in the broth for about 4 minutes.
  • At this point you can add the rice to the broth with the meatballs and arrange with salt.
  • Let it cook together for about 10 minutes or longer if you prefer a creamier consistency.
  • Our rice porridge is ready, decorate the dish with spring onions and a sprinkling of black pepper.
