Peel the spring onion, then cut it into thin slices.
Peel the oranges trying to remove the white skin and cut them into large pieces.
Wash the fennel and slice thinly, like the oranges and onions.
Combine oranges, fennel and onion in a bowl.
Prepare an emulsion in a small bowl with the juice of one orange, oil, salt and mix quickly with a fork. If you like you can also add some black pepper.
Dress the salad with the sauce.
Serve after about ten minutes so that the ingredients have flavored well.
