Cut the potatoes into sticks, making sure to give them all the same size.
Soak the potatoes in cold water for a minimum of 30 minutes.
When you are ready to cook, start by preheat the air fryer to 400F degrees.
Wash the potatoes well under cold running water and dry them well .
In a large bowl place the sliced potatoes, add olive oil, salt, black pepper, smashed garlic and origano and mix until the potatoes are fully coated.
4. Place the fries in the air fryer basket in a single layer and cook for 10 minutes, shaking the basket halfway through cooking.
After 10 minutes add parmesan cheese and mix well, cook for another 5 minutes, always shaking the basket halfway through cooking.
Remove the fries from the air fryer and garnish with chopped basil (optional) and more parmsan cheese.
Serve hot.
