Ingriedients

Make the soffritto

 Cook the soffritto over low heat with pancetta.

Add the beef and cook for about 10715 minutes.  Add the red wine and let it evaporate.

As soon as the wine has evaporated, add the tomato passata, mix well and turn the flame down to a low level.

Cook  for a minimum of three hours over low heat. .

Use Bolognese sauce for lasagna or pasta.
