Carrots Celery Onions Pancetta (bacon) Mince beef Tomato puree (passata) Bay leaves Basil leaves Red wine Broth Salt & black pepper Extra virgin olive oil
Prepare the soffritto
Cook the soffritto in a large pot woth the pancetta.
Add the beef and brown for about 10 minutes. Add the wine.
As soon as the wine has evaporated, add the passata, mix well and turn the flame down to a low level.
Cook for a minimum of three hours over low heat.
