Eggplant parmigiana, also called simply parmigiana or eggplant parmigiana, is a side dish made with eggplant (of course), tomato puree and lots of parmesan cheese.

– Tomato pulp (passata)
– Parmesan cheese
– Olive oil
– Olive oil (for frying)
– Salt & Pepper

Cut the eggplant into slices and put them under salt, this will help remove the bitterness of the eggplant.
Prepare the sauce. In a pan sauté the onion with a clove of garlic, when the onion is golden brown add the passata, cover with a lid and let it cook.
Wash and dry the eggplant well to remove excess salt. At this point, fry them in a frying pan with oil.
In a baking dish, layer first the eggplant, sauce and then the parmesan cheese and basil. Continue this way until the baking dish is filled-
Bake the eggplant parmigiana in the preheated oven and cook for about 30 minutes. Let it cool before serving.
Serve it with homemade bread!
