Pumpkin Risotto

Fall has arrived and this pumpkin risotto is the perfect comforting dish. A creamy risotto to taste autumn's essence with every bite.

Broth  Pumpkin  Rice (Carnaroli rice, or Arborio or Vialone Nano)  Onion  Dry White Wine  Parmigiano Reggiano cheese  Salt & Black pepper   Butter

Ingredients

Dice the pumpkin, and cook it with the onion until soft. When soft, blend half of it and set aside.

Toast the rice and deglaze with the wine. 

Gradually add broth; And cook stir frequently.

When the risotto is cooked, add the pumpkin puree.

"Manteca" over low heat with butter is parmesan cheese.
