To enrich this salad we add fennel and spring onion. A winning combination all together

Clean the spring onions and cut them into rounds and set aside. Do the same with the fennels, remove the outer part and cut them into slices.
Peel the oranges trying to remove the white skin and cut them into large pieces.
Squeeze an orange, and combine the juice with 3 tablespoons of olive oil. Add a pinch of salt and black pepper, and stir. This will be the dressing for our salad.
In a large bowl, combine the cut oranges, fennel and spring onions and dressing. Mix well and allow to marinate for a minimum of 10 minutes before serving.
