Sicilian Eggplant Parmesan Recipe

Eggplant parmigiana is one of those dishes that everyone loves.

This eggplant parmigiana recipe is a delicious dish made of layer upon layer of fried eggplant with a rich Italian tomato sauce and lots and lots of parmesan cheese!

 Eggplants Tomato pulp (passata) Onion Garlic Basil Parmesan cheese Olive oil Olive oil (for frying) Salt & Pepper

Cut the eggplant into slices and put them under salt,

Prepare the sauce. In a pan sauté the onion with a clove of garlic, when the onion is golden brown add the passata and let it cook.

Wash and dry the eggplant well to remove excess salt. Fry them in a frying pan with oil.

In a baking dish, layer first the eggplant, sauce and then the parmesan cheese and basil. 

Bake the eggplant parmigiana in the preheated oven Let it cool before serving.
