Eggplant Caponata is a delicious and traditional Sicilian dish made with eggplant, celery, onions, capers, olives, and tomatoes, among other ingredients. This sweet and sour relish is often served as an appetizer or as a side dish.

Cherry tomatoes Green Olives Capers Celery Eggplants White onion Pine nuts Olive oil Sugar White vinegar Salt to taste Basil leaves

WHAT YOU NEED:

Salt the eggplant to remove the bitter. And start the preparation of the other vegetables.

Cook the eggplant. 

Cook the onions in a pan with olive oil. Then add the olives, capers and cherry tomatoes.

Add the eggplant, sugar and white vinegar mixture and mix well. Lastly, add the toasted pine nuts.
