Cherry tomatoes Green Olives Capers Celery Eggplants White onion Pine nuts Olive oil Sugar White vinegar Salt to taste Basil leaves

WHAT YOU NEED:

Salt the eggplant. And start the preparation of the other vegetables.

Cook the eggplant. Different ways to cook them. Air fryer, fried or baked.

Sauté the onions in a pan with olive oil. Then add the olives, capers and cherry tomatoes.

Add the eggplant, sugar and white vinegar mixture and mix well. Lastly, add the toasted pine nuts.
